Yo-Yo Biscuits

Ingredients

Biscuits

125g unsalted butter softened

3/4 cup plain flour

1/4 cup icing sugar

1/3 cup custard powder

Filling

extra 60g butter softened

2/3 cup icing sugar

2 tsps finely grated lemon rind

1 tbsp lemon juice

Preparation

Step One

Preheat air fryer to 160 degrees celcius


Step Two

Beat biscuit butter until pale and creamy, then add the flour, icing sugar and custard powder, stir to combine.


Step Three

Use your hands to roll teaspoon full of dough mixture into balls. Place the balls 3cm apart on a lined tray. Use a fork dusted in icing sugar to flatten gently. Bake in preheated air fryer 10mins or until just cooked through.

Once cooked remove from air fryer and set aside for 30 minutes to cool.


Step Four

Beat filling butter and icing sugar in a bowl until light and fluffy. Add lemon rind and juice and mix until combined. Spread the mixture on one half of a biscuit and sandwich together with the remaining half.
