Ingredients
Pork Belly (as large as required for number of people)
Chinese 5 spice to rub on Pork Belly plus 1/4 tsp for marinade
1/4 tsp black pepper
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp mustard powder
4 tbsp soy sauce
2 tbsp sesame oil
2 tbsp brown sugar
Smokey Whiskey BBQ Sauce (or your favourite BBQ sauce/marinade)
2 bowls of Pho vegetable (we found these near the 2 minute noodles in the supermarket, they come with rice noodles)
Preparation
Prepare Pork Belly (night before)
Wipe dry pork belly with paper towel, score into rind approx 1 inch or 2-3 cm squares all across pork belly. Lightly sprinkle both sides of the pork belly with Chines 5 spice. Set on a plate uncovered in the fridge overnight.
Marinade (best if pork is marinated for 2-4 hours prior to cooking)
Combine the sesame oil, soy sauce, brown sugar, chinese 5 spice, pepper, onion powder, garlic powder and mustard powder into a bowl and stir until combined.
Now retrieve the pork belly from the fridge and cut the scores all the way through to make individual pork belly squares.
Place the pork belly squares into the bowl with the marinade and ensure all of the pork belly is covered with the marinade. Sit in marinade as long as you can for the best flavour.
Cooking the Pork Belly Bites
Preheat the airfryer to 220 degrees celcius, add a single layer of the pork belly bites into your air fryer basket at a time. Cook for approximately 20-25 minutes for each batch, pulling out when the bites were getting a little burnt around the edges. We also found that each subsequent batch took slightly less time to cook as the air fryer was very hot.
Rice Noodles
We found bowls of Pho that had vegetables in it, placed the spice packets and oil from the packet into the bowl and filled with bowling water, as per instructions. We did this while the last batch of pork belly bites were cooking. Once the last pork belly bites were completed we strained the rice noodles and placed them onto the serving platter.
Pork Belly Bites
Place the cooked pork belly bites into a bowl and pour over the whiskey bbq sauce and mix to they are all covered thoroughly. It is individual taste how much or little you place on these. Once mixed through, place the sticky bbq pork belly bites over the rice noodles and serve immediately!
