
Ingredients
BASE
200g Granita biscuits
100gm butter
1/2 cup condensed milk
1 cup desiccated coconut
2 tsp finely grated lemon rind
ICING
2 cups pure icing sugar
20g butter, softened
2 1/2 tbsp lemon juice
Preparation
STEP 1
Grease and line a 15x25cm slab pan with baking paper
STEP 2
Crush granita biscuits until a fine crumb.
STEP 3
In a small saucepan, add condensed milk and 100g butter and stir until combined and smooth.
STEP 4
To a large mixing bowl, add the granita crumb and condensed milk mixture together. Mix until well combined. Press mixture firmly into the base of the prepared pan and place in the fridge for 1 1/2 hours.
STEP 5
Now make the icing, combine the icing sugar, softened butter and lemon juice in a small mixing bowl and beat together with a wooden spoon until smooth and combined. Take slice base out of fridge and spread icing over slice. Allow to stand at room temperature for 30 minutes to allow the icing to set.
Then serve.
