Anzac Biscuits

Ingredients

1 cup rolled oats

3/4 cup dessicated coconut

3/4 cup brown sugar

1 cup plain flour

125g butter

2 tsp bi carb soda

2 tbs water

2 tbs golden syrup

Preparation

STEP 1

Grease and line a baking tray with baking paper and pre heat oven to 170 degrees Celsius


STEP 2

In a large mixing bowl, add the flour, rolled oats, coconut and brown sugar in a bowl and mix to combine.


STEP 3

In a small saucepan add butter, water & golden syrup over a medium heat. Gently stirring until the butter has completely melted. Once melted remove from heat and add bi carb of soda and stir. Once mixed together, allow to cool for 5 minutes.


STEP 4

Add ingredients from saucepan into the mixing bowl with dry ingredients. Mix to thoroughly combine.


STEP 5

Taking tablespoons of the mixture into balls, place onto baking tray and flatten with your fingers until approx 5mm thick, leaving approx 6cm gap between each ball.

Place into oven and bake for approx 15 minutes (times may vary depending on your oven) or until golden brown and cooked through.

Increase the time if you wish the biscuits to be crunchy rather than chewy.


STEP 6

Once cooked remove from oven and allow to cool on the tray for several minutes, then transfer to cooling rack to allow to cool completely.

TIP: biscuits will keep in an airtight container for up to 4 days.
